Ever since 1954, kyushoku (school lunch) has been an official part of the Japanese school curriculum. Over the years, the laws and menu items have changed, from adding the role of a nutritionist to including rice. I remember binge watching Japanology series some years back (as I was doing some personal due diligence for upcoming visit to Japan I had back then)....and they also had one episode focused on Japan school lunch and the whole ethos/context behind it.

BTW "BEGIN Japanology" is great series to watch for anyone interested in Japan (be it weeb, otaku or casual interest) regd. wide range of topics....it is very professionally done.

There used to be an official YT channel (with every single episode) but it seems to be gone now. It can be used as search string still though and different ppl have uploaded various things:
