In turkey they use pepper ,sometimes tomato, and definitely seasoning and pan-fries with seasoning after cooking on fire. It tastes nice ,and not like rubber.
It varies by the city, its not eaten the same way in everywhere.

It's cut in small pieces with a lot of herbs and when order i always ask if he can pan fry it longer, really don't like the chewy fat consistence.

Vegetables in a Kokorec sandwich is a sin btw.
